In what do you find the simplest of joys?
Wind rustling in the trees, waves washing onto rocks, birds singing, animals, flowers, a good book, sunrises, sunsets, stars, the moon.
Watching my husband sleeping, watching my children growing into adults, watching my grandchildren play.
Dancing, singing, reading, writing, drawing, eating, loving, laughing, crying.
Life is so full of joy I could go on for ever.
Jello or Pudding? And what is your favorite flavor?
I’m not really a big fan of packaged puddings, they tend to be over sweet & otherwise quite bland, but I really love to make my own.
My favourite is Summer Pudding, it’s very simple to make, very healthy & absolutely delicious.
You just line a 1 litre pudding basin with slightly stale, crustless, sliced bread.
Simmer 1 kg of mixed berries in 150 g of sugar (adjust to taste) for about 5 minutes .
Pile the berries & most of the juice into the lined pudding basin, top with a final slice of bread & artistically fill the gaps. (Keep some juice for serving)
Put a plate on top that just fits snugly inside the rim of the bowl, stack it with weights, I use cans of beans, pop the whole construction in the fridge.
Now are the hard bits:
1. Wait … at least overnight … 24 hours is good.
2 Get it out … this involves tipping it upside down onto a plate & coaxing it, at first gently, then roughly & finally manically, until … plop … it magically falls on the plate.
Touch up any unsoaked bread with juice & serve in wedges with cream or yoghurt.
I buy 50o g of frozen exotic berries & pick the rest from my redcurrant bush & the blackberry bushes along the railway. It’s a messy business but very rewarding … & … you will be a hero as well as stuffed in the end.
Is there a language you would like to learn?
My native language is English & I studied Spanish at school which was very useful during my travels in Spain.
I am now in Israel & have a good working knowledge of Hebrew, which I had to get before I could effectively find work.
I am now trying to learn Arabic with a little help from my friends & I am awaiting the start of my Arabic course.
I’m really excited, even though everyone laughs at my attempts to manage some of the really difficult Arabic sounds lol.
Do you prefer juice or fruit?
I love both but I tend to eat more fruit as I am a coffee & wine addict. I drink a lot more coffee than wine, not sure if that’s good or not lol.
I like tropical fruits & forest fruits best. See above …
